    The position is 45 hours per week, weekend and evening work is essential.

    Duties will include:

    Assisting with Wedding and Function preparations
    Liaising with Function guests prior to the event
    Managing staff in the Function Managers absence
    Providing reliable close assistance to the Function Manager during weddings
    Bar work and Cellar Management
    The successful applicant must have a positive, hard-working attitude with experience of team leadership. Previous experience necessary.

    The role will be a Supervisory position and a great opportunity for the right candidate to build a career here at Carus Green.     Responsibilities and Duties

    Responsibilities
    • Manage all activities in the kitchen, including food preparation and production, and management and training of kitchen staff
    • Ensure efficient, cost-effective operation and profitability of food production
    • Supervise and inspect all preparation and cooking equipment on a regular basis to ensure that they are kept clean, sanitary, and in perfect operating order
    • Ensure that food products, presentation, and plating are of the highest quality, and are prepared to serve in a timely manner
    • Assume the role as Head Chef in his or her absence
    • Assure adherence to all standards of food quality, preparation, recipes, and presentation in conjunction with the specifications
    • Monitor holding and storage operations, stocking and food rotation, and guarantee food service sanitation standards are met
    • Assure kitchen personnel is trained in best cleanliness and sanitation practices

    Qualifications and Skills
    • Proven experience as a chef in a similar quality kitchen.
    • Sound awareness and skill within all culinary functions.
    • A passion for consistently high standards and attention to detail.
    • The ability to work well in a high pressured environment.
    • Excellent communication skills with the ability to communicate at all levels.
    • A strong customer service focus with the motivation to consistently drive high service levels.
    Sound awareness of health and safety, food hygiene, COSH and HACCP legislation.

    2 Years experience (prefered)

    JOB DESCRIPTION

    To assist the Senior Chef on duty with storage, preparation and cooking of all food items for the Carus Green Restaurant & Function Suite, whilst adhering to all Health and Food Safety areas of “Due Diligence” as laid out by management in the Carus Green Health & Safety HACCP and Food Safety Hazard Analysis Documents. To also demonstrate and help maintain high levels of service that consistently exceeds the expectations of our members.

    DUTIES

    • To assist and monitor food stocks and stock movement.

    • To ensure minimum kitchen wastage.

    • To learn and record skills and recipes from other members of the department.

    • To follow the cleaning schedules for the kitchen and clean the section and other areas as directed.

    • To ensure stock is controlled and rotated.

    • To ensure that mis en place is completed in your section.

    • To report any maintenance issues to the Head Chef immediately.

    • To comply with all Carus Green policies and procedures to ensure that all-statutory regulations are observed.

    • To comply with the conditions of the food hygiene policies.

    • To be flexible and willing to help other departments at busy times if required.
